Making Pesto

Every summer I make a lot of pesto. The kids love to eat it on noodles (aka green noods). I usually get my basil from the farmer’s market and make three batches at a time.

At the beginning of the summer, Danny’s sister gave me a basil plant. It separated out into five plants that we planted in our little garden. The basil has grown like crazy. Each of the five plants is now bigger then the entire plant was when we first got it.

I have made 10 batches of pesto and still have enough to make at least five more!

Pesto Sauce
Makes 1 1/3 cups

 2 large garlic cloves
1/2 cup pine nuts
2/3 cup shredded parmesan
1/2 teaspoon salt
1/2 teaspoon pepper
3 cups of loosely packed basil leaves
2/3 cup EVOO (you might not need all of this amount)

With food processor running, drop in garlic. Stop motor and add nuts, parmesan, salt and pepper and chop. Stop motor, add basil, put lid back on and with motor running slowly add the EVOO through the lid opening.

    Hey Darcy! I love it! I remember you loving pesto when were living together! Yummy! Especially love the picture of Owen eating it! Mario wants to know what that does to his GI system….in other words… what is his poop like after that??!!!!

      That’s funny…it didn’t seem to matter for his poop….at least not any more than the pound of blackberries that he consumed:)
